String Beans in Tomato Sauce

If you are looking for a veggie side dish that is simple & bound to impress, then I strongly urge you to test this one out. I found it while rummaging through David Rocco’s Facebook page and whipped it up for an impromptu BBQ. The ingredients are quick to find (you probably have most of them in your pantry) and the prep/cook time is minimal. It is literally one of those set it & forget it recipes.

You will need:

  • 1 lb of string beans (tips trimmed)
  • 1/2-3/4 Cup of Chopped White Onions (this is just my suggestion, add as much or as little to your preference or use onion powder)
  • 1 Clove of Garlic, minced
  • 1/2 Can of Crushed Tomatoes with a splash of the juice (I like San Marzano tomatoes for flavour)
  • Chili flakes
  • Salt
  • Extra Virgin Olive Oil
  • Fresh Grated Parmesan
Here’s what you do:
  • Heat up olive oil in a saucepan
  • Add chopped onions, chili flakes and crushed tomatoes and cook for 5 minutes
  • Add salt & the trimmed string beans and cover saucepan with a lid
  • Let simmer for 15 minutes, stirring once or twice
  • Rest at room temperature for a few hours
  • Serve cold with fresh grated parmesan sprinkled on top

    HMMMMMMM I LOVE this…. I think I had this every other day while I was in Portugal. A very European way of preparing them. And so delicious! Going to try out your recipe soon 🙂
