I was so lucky to receive The Smitten Kitchen Cookbook as a birthday gift from a great friend. As a long time fan and reader of Deb’s blog, I actually had a mini freak out upon opening the book and spent the next two days perusing & bookmarking it for new recipes to try. It was a tad ironic then when I spent the long weekend rekindling my flame for the Smitten Kitchen blog and discovered this unreal Peach Shortbread recipe.
Now I have to preface this little recipe share by saying that this was an absolute crowd pleaser in my family home. It did not make it very far, poor thing, as it was happily eaten up in only a few hours. I even admittedly messed up the recipe and forgot to add the egg to the shortbread mixture (yes I know how could I do that, but seriously shortbread recipes never require an egg) and still, this came out flaky and sweet with a nutty richness only browning butter can do. In the future I definitely will add more peaches or a layer of preserves, as I would’ve loved to have more fruity flavour in every bite.
Despite these few tweaks and trip ups, it was a simple, tart delight…perfect to celebrate peach season and the best way to get my hands dirty again after a long hiatus, in my own smitten kitchen.
