oven-baked parmesan chicken strips.

i have been making this recipe for some time. the first time i made it with my girlfriend, jody, and i used italian {plain} breadcrumbs & regular chicken breasts as the recipe called for. what we found was that the chicken did not cook the whole way through & parts of the crust were still soggy.

i can happily say i have finally perfected past problems. two suggestions i would make would be to switch out plain breadcrumbs for panko (japanese) breadcrumbs & when buy butterfly-style chicken breasts. these are flavourful, easy peas & quick recipe that are always a hit for guests.
