Italian Mojitos

Now I love me a good mojito. When summer hits and patio season is upon us, the first thing I do is reach for a refreshing, minty mojito. So you can imagine my glee when I was delivered a bottle of Astoria Prosecco DOC complete with suggested prosecco-friendly recipes to test out…most importantly: Italian Mojitos.

I don’t know if I’ve been living under a rock but oh my goodness Italian Mojitos combine two of my favourite summer past times: crisp and bubbly Prosecco & fragrant and flavourful Mojitos. The recipe is basic: delicious simple syrup, mint and rum, topped off with sparkly, tart prosecco. How could I ask for anything more and why haven’t I been ordering these all summer?

I used this David Rocco recipe here and subbed in raw cane sugar to give the syrup a dark colour and richer flavour (and there’s something about saying I used raw cane sugar that makes it feel healthier to me). The final mix was a party-in-my-mouth punch of  a drink. As summer comes to an end, it seems only fitting that I encourage you to shake this cocktail up, as a final toast to the amazing season we’ve had.
