Coffee Talk

Processed with VSCOcam with h5 presetHi guys! It’s a new year and with that comes some new instalments to the blog. I’ve had a few of you ask me questions via Snapchat (find me under the username: lexniko) and in the comments below. I thought what better way to address them all than with a little coffee talk post. I first saw the idea for a Q&A forum through the lovely ladies of Somewhere, Lately – they set up a weekly coffee talk where they answers questions around outfits, beauty, child care tips (none of that here, sorry but I am happy to share pet care tips lol) and everything in between or more personal.

I’m answering a few below and would love to make this a regular feature on the blog…help me help you! I love interacting with you guys and am happy to share more direct info for you. Here we go with the first round of coffee talk!

1. What is the tea you Snapchatted that contained “nature’s Valium”?

I drink this tea nightly when I am having trouble sleeping. It is called Organic Mother’s Little Helper from David’s Tea. It has no caffeine and contains an herb called Valerian, which is what they dub as nature’s Valium. I can be quite the insomniac so I find this extremely helpful to avoid tossing and turning. If I really can’t sleep I also take melatonin or powder magnesium citrate (which actually will knock you out faster than Tyson).

2. What are some of your go-to healthy snacks?

I’ve been on this cleanse for a few days now and beyond missing wine a ton, it’s felt pretty great. I tend to stick to a similar diet throughout the year but am known to dummy a pizza or two on the weekends (I’m an addict). In terms of snacks my favorite has to be avocado slices with dijon mustard and you wrap it in a slice of turkey meat. It’s so salty and delicious and I’m way more of a salt v. sweets girl. For the cleanse I’ve discovered a yummy sweet treat though which surprised me that I’m craving it so much. I take a brown rice cake, layer it with almond butter, add an apple slice and then sprinkle it with cinnamon. It is actually SO GOOD! Lastly, I’d have to say my easy go-to is definitely popcorn. I buy organic seeds and pop it myself in the microwave with a bit of butter and one of these (this popper is BPA and melamine-free so you don’t have to worry about sharing the snack with your kiddies). Then I sprinkle it with salt and a little garlic powder or paprika! It’s crunchy and salty with a bit of flavor and I know Olivia Pope approves, so I’m very into it.

3. Can you start sharing the sizing of the items that you’re wearing in your posts?

Of course! I have been asked about sizes and fit on items that I’ve shared on the blog and I will definitely be sure to go into more detail about this in future posts. A lot of you asked about this Windsor Store dress, I got it in a Size Small and it fits perfectly but it is long. I am 5’0 tall and so I can wear it with heels and it’s still a bit long but I love how it flows and won’t get it altered though I think it would look SO cute with these sneakers.

4. You keep cooking chickpeas on Snapchat, can you share the recipe?

I think I eat too much chickpeas, lol. I don’t know why they are just so good to me and fill me up as a healthy alternative to fast burning carbs. I usually make a big batch of chickpeas and some type of veggie and then add them to brown rice for a bit of a dinner bowl. It’s really just a fast way to get my nutrients and eat earlier after the work day. I typically heat up a bit of olive oil, add two cloves of chopped garlic and let them simmer for 15-20 seconds or until I hear a sizzling sound. Next, I add 1/2 an onion, chopped and stir until they’re almost translucent. Then I’ll add a can of rinsed chickpeas (I like these ones) and stir/mash them for a few minutes. I’ll add a drizzle more of olive oil, salt and pepper and my favorite, red pepper flakes. I’ll keep stirring/mashing until the chickpeas break up a bit and then I’ll mix in some kale and spinach for greens and let them wilt down. While I typically eat this on it’s own (I swear it’s so yummy) or on top of a bed of brown rice, I’ve also used it as a topping for a crostini appetizer when I host friends.

5. Why don’t you chop your hair like you’ve styled it in this post?

GUYS! I am NOT cutting my hair hahaha. Your feedback has been so sweet and amazing and I love that you like that length of hair on me. That being said, I have an unhealthy attachment to my hair and I am not cutting it any time soon! I definitely want to share more about hair and beauty on the blog this year so I will be trying my best to add more content around this, so if you have questions or want to see anything specific, please let me know!
