Buca’s eggplant parmigiana.

There are few times when I toot my own horn on this blog. OK, that’s not true, I think I might do that a lot, but this time I swear it’s warranted! I have been craving eggplant parmigiana ever since I tried it {for the first time ever *gasp*} at Italian bakery, Cucina Aurora, a few weeks ago. It was so delicious, it set off a craving craze to remake the dish at home. 
With the long weekend coming to an end, I decided to make something extra special for me & DT. I heard so many rave reviews of Buca’s Eggplant Parmigiana and after some searching I finally found the recipe {here} on Toronto Life. It took a long time to prep but it was completely worth the effort. DT actually said it was the, “best thing he ever ate” in our apartment. 
I encourage all of you to try this IMMEDIATELY when you have a few hours to prepare. You will absolutely not be disappointed and I’m looking forward to the next time I can put this meal together.
