Balthazar’s Cream of Mushroom Soup

I am a huge soup fan. Give me a warm bowl of rich, married flavours on a cold day & I am basically offering you my future first-born.

Now before I scare you off listen to my story. Over the weekend, I was mentally prepping for the work week (chilly mornings and cooler nights) the best way I could: by pairing cold-weather food fixes with my weekday meal prep. I was rummaging through old blog posts and came across this one here. Clearly, this Cream of Mushroom Soup recipe is one I’ve been eying for some time. And while it was months ago, my cravings came back just the same. So I immediately ran to the grocery store and whipped up a batch instantaneously. It was (and is) the epitome of comfort food on a busy fall evening; the perfect pause to a hectic Monday. Paired with a strawberry and almond-infused summer salad, my weekday meal bridged the seasons one last time. And though the summer weather has to go, these seasonal soup recipes are definitely warm enough to get me through the next few months.
